COSMO Nottingham extends its Chinese range as it welcome new head chef Xian
A head chef who has worked in the kitchens of some of London’s finest Chinese restaurants has joined Nottingham’s leading buffet restaurant COSMO Authentic World Kitchen.
Chef Delun Xian has been appointed as head of the Chinese section at the restaurant, in Milton Street, following a number of years working for the world-famous Hakkasan, which operates three award-winning restaurants in the capital.
Chef Xian, 48, whose father was also a chef and inspired him to pursue a career in the kitchen, hails from Guangzhou, in southern China. He is bringing his city’s influence to bear on COSMO’s Chinese offering by increasing its range of barbecued meats and dim sum, both of which are synonymous with Guangzhou.
Last month, to mark Chinese New Year, he introduced eight new dishes, including Chinese roast duck – better known as Peking duck – Chinese braised beef brisket, Chinese roast pork and soya chicken.
He will now reinvent the restaurant’s dim sum section, adding freshly made and authentic specialities such as fu pei guen – beancurd skin roll – chicken and sweetcorn dumplings and lo mai gei, which is Chinese sticky rice roll wrapped in a lotus leaf.

“Nottingham’s buffet restaurant scene is thriving but we have built ourselves a strong reputation by setting high standards for the quality and diversity of our food.
“Chef Xian’s appointment underlines our commitment to continuing to develop new and authentic dishes for our customers to enjoy. Our Chinese food is extremely popular and he has a host of exciting ideas that we cannot wait for him to put into practice.”
Chef Xian said: “I am very happy to have joined COSMO Nottingham. I like creating authentic Chinese dishes and enjoy how at COSMO customers can see us cooking so they understand what ingredients we use and how we make our food.
“Barbecue meat is popular in Guangzhou and it is also famous for its dim sum. All of our dim sum will be freshly made and there will be dishes that people in Nottingham may not have tried before.”
COSMO Nottingham opened its doors last year as the chain’s flagship restaurant and broke new ground for COSMO with its design scheme and a host of innovations.
It serves 150 dishes from around 10 different countries, including China, India, Brazil, Thailand and Japan, with diners able to see their food prepared at 10 live cooking stations.
Prices start at £8.99 per person for lunch Monday to Friday and £11.99 for lunch on Saturday. Dinner is £14.99 from Monday to Thursday and £15.99 on Saturday, while it costs £14.99 all day on Sundays.
